Where did El Capitan Foods come from?
El Capitan Foods was born out of a food service background, not a corporate lab. Our founders spent years working with chefs at some of the best restaurants learning how real food should be made — from oils and masa granularity to perfect processes and controlled temperatures. Rice Tortilla Chips... Why? How? So many questions...
It was a couple of days before Thanksgiving, circa 2021. Our founder was sent on that classic “grab a few last things from the grocery store” mission — the night-before-the-big-dinner scramble. On the list: gluten-free flour-alternative tortillas and the annual tofu turkey for a family member with dietary restrictions. Dinner came and went. When it was time for leftover tacos, he warmed corn tortillas for most of the family and the special tortillas for Sam, the vegan and gluten-free family member. He shouted, “Hey Sam! Your Ferrari tortillas are ready for your tofu turkey tacos!” She asked why he called them that. He said, “Because I paid a king’s ransom for these things — over a dollar each. They’re supposed to be allergy-friendly but use almond flour, which is an allergen too!” Sam suggested he try them. One bite later, he said, “That’s it? All that money and hype… for this?” She replied, “If only you knew a guy who owned a tortilla factory that could make something better.” That line sparked more than 90 test batches to develop an inclusive, gluten-free tortilla wrap. One day the team made chips from the new rice-flour tortilla dough. The crispy, light result became the base for our Rice Tortilla Chip line.
